I’ve written before how a plant-based diet has changed my life. Of all the many fruits and vegetables I eat, none is more important to me than spinach. It’s true, Popeye was on to something.
Most mornings I start the day with a large spinach smoothie. This smoothie recipe only has a few ingredients so it’s super easy to make when I’m just waking up and am still out of it.
